Don't Get BBQ Sauce on Your White Pants: Memorial Day Recipes!

Memorial Day is the official sign that Summer is here! Restaurant patios start popping up and blocking your way on every sidewalk. You can finally bust out those white pants you've been hiding in the back of your closet all summer. And my personal favorite sign of summer, the smell of grills being fired up all over the neighborhood!

Tomorrow is a great day to honor the American tradition of a good ole' fashioned BBQ. Granted, with the way the weather has been, you might have to revert to indoor activities and hope the "Grill Master" has a good poncho...

Since the only grill I own is a Lil' Smoky that I operate from my miniscule back yard that I share with six other apartments, I offer up these fantastic recipes in hopes that someone will throw a hell of a party...and send me the leftovers.

Here are some of my favorite recipes/party ideas:

Grilled Kabobs
The easiest way to please everyone at your party (but mostly just your picky-eater sister who seriously picks at everything you make until frustrated, but still consumes 3/4 of the taco dip...) is to let them build their own kabobs. Here are some tips courtesy of Tasteofhome.com.
  • Soak wooden skewers in water for 30 minutes before using. This will prevent them burning or splintering while on the grill.
  • Set up a kabob party with pre-soaked wooden skewers and a variety of meats, vegetables, fruits, seasonings and dipping sauces for your guests to experiment with. Be sure to coat the grill rack with nonstick cooking spray before you begin grilling. Count on guests using four skewers each.
  • Cut meats, vegetables and fruit into even-sized pieces for better cooking results.
  • Give foods with longer cooking times, like potatoes and carrots, a jump-start by partially cooking them beforehand.
  • Metal skewers are available—the flat versions prevent your meats and veggies from rolling around. You can also purchase kabob racks and baskets to make grilling a cinch.
  • For restaurant-style grill marks on your kabobs, wait until the lines appear and then rotate the kabob 90 degrees and wait for the next set of lines to appear.
  • If you're using a charcoal grill to cook your kabobs, wait until the coals turn gray and stop smoking, then spread the kabobs out.
  • When assembling kabobs, leave a small amount of space between each piece, which helps promote even cooking.

Cold-Fashioned Potato Salad
As a self-proclaimed Food Network junkie, I LOVE this potato salad from Alton Brown. It’s also the closest I could find to my Grandma’s recipe which is secret and magical. (She promised to send me leftovers from this weekend!)
Yield: 4 to 6 servings
Ingredients
  • 2 1/2 pounds red potatoes, large diced
  • 3 tablespoons cider vinegar
  • 3/4 cup mayonnaise
  • 1 teaspoon mustard powder
  • 1/4 cup chopped parsley
  • 1 tablespoon chopped fresh tarragon
  • 1/2 tablespoon very thinly sliced garlic
  • 1/2 cup small dice red onion
  • 1/2 cup thinly sliced celery
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
Directions
  1. Place potatoes into a large heavy-bottomed pot. Cover with cold water and place over medium heat. Cover the pot and bring to a boil. Immediately reduce heat and remove lid. Gently simmer until potatoes are fork tender. Drain and place into an ice bath to cool. Remove skin by rubbing with a tea towel. Slice potatoes into rounds and place into a zip top bag. Add the vinegar and toss to coat all of the potatoes. Place the bag into the refrigerator overnight.
  2. In a large mixing bowl, combine the mayonnaise, mustard, parsley, tarragon, garlic, onions, and celery. Once evenly combined, add the potatoes and season with salt and pepper. Let the salad chill in the refrigerator for at least an hour before serving.
Four Juice Punch!
Despite the incredibly lame name, this punch is actually crazy-delicious. AND you can make a double batch and divide it into alcoholic and non-alcoholic for the kiddies. Just be sure to put the spiked batch in a hard-to-reach place.
Ingredients
  • 1 can (12-ounce) frozen cranberry-juice cocktail concentrate
  • 1 can (12-ounce) frozen raspberry-cranberry-juice cocktail concentrate
  • 1 can (12-ounce) frozen apple-juice concentrate
  • 1 can (12-ounce) frozen lemonade concentrate
  • 1 liter chilled ginger ale
  • 2 liters chilled club soda
  • 2 cups cold water
  • 3 cups chilled vodka (oh yeah!)
Directions
Combine frozen concentrates in a punch bowl. (A large soup tureen makes a good substitute.) Thaw, mix well and refrigerate until needed. At serving time, add ginger ale, club soda, water and vodka, if using. Serve with plenty of ice. I like to add fruit to mine to make it a little more festive looking.

Pirates of the Caribbean 4: On Stranger Tides come out today and we could not be more excited!

The Psychobaby Crew has been vouching for the coolness of Pirates for eight years now - about as long as the Pirates of the Caribbean franchise. After doing a quick count, we have almost 50 pirate-related items for sale at any time! You can find everything from Treasure Chests to Full Pirate Costumes!

We think that only the coolest kids know how to rock the skull and cross bones as well as Jack Sparrow, and we of course want to help them do it! (Minus the eye-liner, of course) If you don't believe us, here is a short list of some of the most interesting real, fictional and dress-up pirates I've ever heard of to inspire your little swashbuckler.

Beatle Mania Birthday Party!


The Psychobaby crew loves music. We find ourselves debating over iPods, cds, new releases and who's Pandora station is the best. One thing we ALL can agree on is the fact that The Beatles remain number one in all of our hearts, forever.

I recently came across a birthday party online that made me wish my birthday was tomorrow so that I could throw this party and wish that I wasn't turning 24 so that it would still be the coolest birthday party ever. I have decided to bookmark the page and save it for a little tyke of my own.

Tattoos, Old School, 80's...Stella Blu tees!

My second favorite Dead song (Ripple is #1) is a now a new addition to Psychobaby's hot summer collection of cool, crazy kids' stuff!
Local Chicago designer, Erin Raymer, has wowed us with Stella Blu tees. Her colorful, urban graphics are sure to win over any hipster kid!
Don't let the cool factor of these tees let you think that Erin forgot the most important thing...softness! These tees are sooo comfy! For better or for worse, my son hasn't taken his fire motorcycle tee off in two days! He says it makes him faster. Maybe, but that shirt is going in the wash tomorrow!

Uno, Dos, Tres, Taco Time!

It's hard to believe by looking out the window that Cinco de Mayo is here! I usually correlate this holiday with basking in early summer weather after over eating Mexican food. This year, after looking at another disappointing 10 day forecast for Chicago, I hit the pavement to find the heat on my own...wrapped in a tortilla.

4. Lazos Tacos - 2009 North Western Avenue
It's one of the most heated debates I find myself in: Aturos or Lazos. Western Ave is home to two side by side, 24 hour taco joints. Once you make your stance known between the two, you never set food in the other again. My loyalty is found in Lazos, where you can pick up just about anything your stomach is craving from south of the border. I am partial to their queso fundito. Order it once and I am sure that you will never walk next door to Aturos again.

3. Irazu - 1865 N. Milwaukee
Ok, so Irazu is Costa Rican, but when it comes to burritos they have it down to a well crafted science. I stick with the chorizo mixed with hot pickled peppers. They wrap it up with a authentic Costa Rican secret sauce and call it a day. Simple and delicious, it's one of the most crave worthy burritos in Chicago.

2. Big Star - 1531 North Damen Avenue
Big Star is quickly becoming a Psychobaby Crew favorite (We have eaten there three times this week!). I was sad to see Pontiac Grill go, but when I got word that a hip taco joint opened up there and made good use of the giant patio, a giant smile crept across my face. Walk up window or sit down, Big Stars pork belly and fish tacos are some of the best I have had. I can imagine that once the summer sun makes it's way here I will find myself on their patio, margarita in hand, all summer long.

1. La Pasadita - 1132 N. Ashland Ave.
If you have ever driven down Ashland ave, near Division, it's quite possible that your first questions are "why do three restaurants right next to each other have the same name? Why does this street smell like awesome steak?". La Pasadita took over the street and with good reason. I find myself here weekly feasting on the chili rellenos taco, their superb guacamole and of course carne asada by the shovelful, all topped off with hand squeezed orange juice. This is my long time favorite and will always remain number one in my book. As for which one of the three to go to? I choose the sit down restaurant, number #1132.

Everyone has their own foodie favorites and as a taco connoisseur, I would love to add yours to my summer eat-athon directory (although if you says Aturo's....) so start sharing and start the fiesta!
